Fixens and eatins

These past couple of days I have felt like Susie homemaker Jr. I keep cooking, cooking, cooking, and quite some hurried cleaning today. :) So for tonight I will post one, and it is my new favorite recipe for a rainy day.
Tamatolina roast. 
This is my own creation. It serves 4 people. and takes only a few minutes of your time. About 10minutes prep, and 15 minutes cooking, depending on your time and how you like it cooked. 

Ingredients. 
  • 4 tomatoes sliced (like for a hamburger) I like them on the thicker side.
  • two to 4 Red or Yellow Bell peppers julieaned. 
  • 2 large onions.
  • 1 to 2 cups (depending on how much you like) of ricotta or mozzarella cheese. (I make my own out of goats milk)
  • 1/4 cup of basil slicefied.

Put fruits and onions on a pan. Put the basil on top of that, then, Put the cheese over the top, and bake in a 350 degree oven for about 15 minutes, or until the veggies are soft and the cheese starts to get brown. To brown the cheese more you can turn on the broiler for 2 to 3 minutes.
