Supper recipes of the week.

Kale fry.
Makes 4 servings and take about 30 minutes depending.
Ingredients
  • 2 Bunches of Kale cut into bite-able sizes
  • 1 cup of tomatoes dice-afied
  • 1/2 cup of pine nuts
  • 1/2 cup raisins or dried cranberries
  • 1/4  to 1/2 teaspoon of salt
  • 4 tablespoons of ghee (clarified butter), sunflower oil, or coconut oil.
  • pepper to taste.
Heat up the oil on medium heat in a skillet (I prefer using my wok). Put in all the Kale and put on the lid. you can also add the pine nuts if you want them a little toasted. Let it cook for about 5-8 minutes or until the kale turns a nice bright green and becomes a bit soft. you should stir it a couple of times so that it cooks evenly. 
At this point  you can eather add the rest of the ingredients or let the kale become crispy.







I really like this recipe, the ingredients are things that I keep on hand, and they go so perfectly together. Plus the colors are complementary. :)
